Zimtsternen (cinnamon stars)

One German tradition which I truly fell in love with is to bake Xmas cookies called Plätzchen to give it to friends, families and colleagues during the advent time. There are hundreds of different cookie type and family recipes are passed down through generations. Normally I meet with my girlfriends on a Sunday to bake Plätzchen, listen to Xmas Carols and bake hundreds of cookies. Since this year, I am in between homes during the advent and cannot bake myself, I am happy to share with you some of my favorite Plätzchen recipe.


  • 190 g confectioner sugar
  • 100 g almond powder not blanched
  • 200 g hazelnut powder
  • 2 egg whites
  • 1 tea spoon cinnamon


Whisk the egg whites with the icing sugar.

Set 1/3 aside for frosting and cover it with clingfilm. Place it in direct contact with the mix to protect it from drying.

Add almonds, hazelnuts and cinnamon to the rest 2/3 of the preparation and mix it with a spatula until you can knead into a dough. Let it rest for about 20 minutes in the open air so that it becomes less sticky.

Spread the dough about 8-10 mm thick and cut out the stars with a cookie cutter.

Place on a baking sheet with parchment paper and cover with the remaining egg white frosting.

Bake it at 150 ° C / 302 ° F for about 10-12 min. After 8 min of baking open the oven and create a small gap by sticking a wooden spoon in the opening for the rest of the cooking time (to reduce the humidity and make sure that they keep the right shape).

Those cookies tend to dry very fast.  So do not bake them more than a week before serving them and store them in a metallic box for them to stay soft and keep their delicious Christmassy flavor!
