Galette des rois (three Kings cake)

In France everyone eat a special dessert on the day of epiphany to commemorate the visit of the magi bearing gifts for new born Jesus.

When dessert comes, the youngest around the table go bellow the table and assign each piece of cake to a member of the party. Inside the cake is a surprise (usually a tiny China figurine but in older days people would use gold or silver coin) and whoever finds it in its plate will be crowned king or queen.

In France one cane buy a galette des rois it at the neighborhood bakery or at any supermarket but since I moved abroad in 2011 I learned to make it to taste again the soft and tasty frangipane (almond paste) filling taste. It’s actually super easy to bake and the ingredients can be found in most supermarkets.

  • Ingredients
    • 2 puff pastry sheet
    • 280 g blanched almond powder
    • 200 g powder sugar
    • 150 g soft butter
    • 4 eggs
    • 1 egg yolk
    • 1 surprise (china figurine, big coin or any other small object that won’t melt in the oven and does not risk being swallowed, this year I used a tiny conch shaped sea shell)
  • Preparation

    1. Spread one puff pastry sheet on a baking tray.
    2. In a bowl mix the butter, almonds, sugar and eggs until the paste becomes homogeneous.
    3. Smear the paste on the pastry sheet leaving a half centimeter / 0.2´ free on each side, hide the surprise in the feeling.
    4. Top the cake with the last puff pastry sheet and seal the sides together.
    5. Spread the egg yolk on the top to give a nice color to cake and draw a pattern of your choice on the top using a knife (see picture for an example).
    6. Bake for 20 minutes in the oven at 200•C / 392•F.
